Pistachio Drop Cookies
Ingredients
  • 1 cup ( 130g) salted or unsalted pistachios*
  • 1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
  • ¾ cup ( 90g) confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 2 and ¼ cups ( 281g) all-purpose flour ( spooned & leveled)
  • optional: 1 to 2 drops green food coloring (I used 1 drop of gel)
  • subheading: Brown Butter Icing (Optional):
  • ¼ cup ( 4 Tbsp; 57g) unsalted butter
  • 1 cup ( 120g) confectioners’ sugar
  • 2 Tablespoons (30ml) milk or heavy cream
  • ¼ teaspoon pure vanilla extract
