Blueberry Couscous Cake/Pudding
Ingredients
  • 1 cup orange juice
  • 1 cup peach juice
  • 2.5 cups cold water
  • 2 cups couscous
  • 1 cup blueberries
  • 1 tsp vanilla extract
  • 1 tbsp grated orange rind
Steps
  1. Combine juices and cold water in saucepan. Simmer for 5 min.
  2. Add couscous and stir for few mins.
  3. Cover and simmer for 10 min.
  4. Add blueberries, vanilla, orange rind.
  5. Pour into loaf tin and chill for an hour
