Thomasina Miers' Pork Pibil Tacos
Ingredients
  • 1 teaspoon allspice berries
  • 2 teaspoons freshly ground cumin seeds
  • ½ teaspoon cloves
  • 1 teaspoon peppercorns
  • 100g achiote paste
  • 3 tablespoons cider vinegar
  • 1 medium onion, peeled and coarsely chopped
  • 3 fat garlic cloves, peeled and coarsely chopped
  • a large bunch fresh oregano or 1 teaspoon dried oregano
  • 3 fresh bay leaves
  • 2 tablespoons sea salt
  • 3 tablespoons olive oil
  • juice of 6 oranges (about 450ml)
  • 2kg neck of pork
  • ½ habanero or Scotch bonnet chilli, de-seeded and finely chopped
  • 40g butter
  • subheading: For the pink pickled onions:
  • 1 large red onion or two medium sized ones sliced quite thinly
  • A small amount of fresh habanero chilli very finely chopped
  • Zest and juice of 2 limes
  • Zest and juice of 1 orange
  • Salt and pepper to season
  • subheading: To serve:
