Chocolate Mousse Tarts

  • 125g chilled butter, chopped
  • 1 free-range egg yolk
  • 2 tsp chilled water
  • ½ cup (125ml) dulce de leche
  • Mixed berries, to serve

  • 200g dark chocolate, chopped
  • 20g butter
  • 2 tbs Frangelico (optional)
  • 2 free-range eggs, separated
  • 1 cup (250ml) thickened cream
  • subheading: Chocolate ganache (optional):
  • 50g dark chocolate, chopped
  • ¼ cup (60ml) thickened cream
