  • 15 oz can pumpkin purée (425 oz)

  • ⅓ c egg whites or 2 eggs or 2 flax eggs
  • 1 tsp vanilla extract
  • ¼ tsp orange extract (or 1 tsp orange zest)
  • 1 cup grated carrots (2 large), used cheese grater
  • 1 cup grated apple (1 large apple)
  • Dry
  • 1 cup vanilla protein powder (whey and beef have both worked great)
  • ¼ c coconut flour
  • 1 tsp baking powder
  • ¼ tsp pink salt
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ½ c raisins
  • ½ c unsw coconut flakes
  • ½ c chopped pecans or walnuts
