  • 1 English Cucumbers cut into bite-sized pieces or quartered
  • 1 pint Blueberries
  • 1 large Sweet Potatoes cut into bite-sized pieces and roasted
  • 1 /2 cup Raw Pecans
  • subheading: Oil-free Apple Cider Vinegar Dressing:
  • ¼ cup Apple Cider Vinegar
  • 1 Shallot
  • 1 clove Garlic
  • ¼ cup Water
  • 1 Tablespoon Maple Syrup
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon Fresh Lemon Juice
  • Salt and pepper to taste
