Sweetie's Pumpkin Pie

Ingredients
  • 1 large can of pumpkin (figure about 1 cup per egg, maybe a bit less)
  • 1 ½ cups sugar (a little more to taste is fine)
  • 3 teaspoons cinnamon
  • ½ teaspoon salt
  • 1 tablespoon (about) freshly grated ginger
  • 6 eggs
  • 3 “glugs” molasses (about ½ cup)
  • 1 to 2 cans evaporated milk
  • Enough fresh milk to fill 3 pie shells (optional)
  • 3 unbaked pie shells (if adding milk, otherwise need 2)
Steps
  1. Beat eggs in large bowl
  2. Mix in sugar, cinnamon, salt, and ginger
  3. Stir in pumpkin
  4. Gradually stir in evaporated milk
  5. Pour in pie shell
  6. Bake in preheated 425°F oven for 15 minutes
  7. Reduce temperature to 350°F and bake for 40 to 50 minutes
  8. Cool on wire rack for 2 hours
