Maple Rhubarb Slab Pie
Ingredients
  • subheading: For the pastry:
  • 3 cups all-purpose flour, plus more for the work surface
  • 3 tablespoons sugar
  • ¾ teaspoon coarse salt
  • 18 tablespoons (2 ¼ sticks) cold unsalted butter, cut into pieces
  • 6 to 8 tablespoons ice water
  • subheading: For the filling:
  • 6 cups chopped, fresh rhubarb
  • ½ cup maple syrup
  • ½ cup sugar
  • 2 to 3 tablespoons instant tapioca (3 T makes the filling slightly easier to handle but sets up a little stiffer. Your choice.)
  • 1 teaspoon lime zest plus 2 tablespoons juice
  • subheading: To finish:
  • 1 large egg yolk
  • sanding sugar, for sprinkling
