A delicious twist on the usual Chicken Salad.

Ingredients
  • 4 c. Cooked Chicken, cubed
  • 1½ c. Celery, sliced
  • ½ c. Green Onion, sliced
  • ¼ c. Parsley, chopped
  • 1 c. Seedless Red Grapes, halved
  • ½ c. Avocado Mayonnaise
  • 1 T. Lemon juice
  • 1½ t. dried Tarragon
  • ¼ t. Sea Salt
  • ¼ t. Pepper
Steps
  1. Add Chicken, celery, onions, parsley and grapes to a large bowl. Stir to combine.
  2. In a small bowl add mayonnaise, lemon juice and spices. Whisk to combine. Pour dressing over chicken mixture and using a rubber spatula, gently mix until all salad ingredients are covered with dressing. Serve.
