Pasta with Tomatoes, Capers, Olives and Breadcrumbs
Ingredients
  • 4 tablespoons extra virgin olive oil
  • 5 garlic cloves, 2 sliced, 3 minced
  • 1 ⁄2 cup fresh breadcrumb
  • 1 ⁄2 teaspoon hot red pepper flakes
  • 2 (14 ounce) canspetite diced tomatoes, with juice
  • 4 tablespoons capers, rinsed and coarsely chopped
  • 1 cup green olives (4 ounces) or 1 cup black olives, pitted and coarsely chopped (4 ounces)
  • salt & freshly ground black pepper
  • 1 lb spaghetti, preferably a good whole-wheat brand
  • 1 ⁄4 cup chopped fresh parsley (optional)
  • 1 ⁄3 cup freshly grated parmesan cheese (optional)
