Slow Cooker Vegan Red Beans and Rice
Ingredients
  • 2 15 oz. cans red or kidney beans, drained and rinsed
  • 1 cup chopped green pepper
  • 1 cup chopped celery
  • 2 tsp. dried thyme
  • 3 cloves garlic, minced
  • 2 ⅓ cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 1 cup rice
