Breakfast Egg & Sausage Muffins

Ingredients
  • 9  Eggs
  • 1 tube of Owens Breakfast sausage browned
  • ⅓ to ½  C Cheddar Cheese
  • ½ C Picante Salsa
  • 2 Tbsp. Milk or Half & Half ( can be omitted)
Steps
  1. **Heat 1 Cup water on Saute in IP while mixing ingredients
  2. I brown my sausage in a skillet. Whisk eggs in a bowl and then add sausage, cheese, Picante and milk. Stir together well.
  3. Spray silicone muffin pan, pour about ¾ full in each muffin slot. Place the muffing pan on top of the trivet and close the lid, seal and set IP to Manual for 8 minutes and then NPR for 2 minutes.
  4. Brown in oven under broiler or in a skillet on the stove top ( Heat skillet - spray skillet with oil and place muffins in pan and brown on each side for a minute.
  5. I found no Salt need due to sodium in the sausage.
  6. Freezable.
