New England Style Low-Carb Clam Chowder
Ingredients
  • 3 pieces thick-sliced bacon
  • 1 medium onion, chopped small
  • 2 medium celery stalks, chopped small
  • 2 cloves garlic, pressed or minced
  • ¼ teaspoon black pepper
  • ¾ teaspoon Old Bay Seasoning (1 teaspoon if you like your soup a little spicy)
  • OR ½ teaspoon celery salt and a pinch of cayenne pepper
  • Flour or low-carb thickener - see introductory note
  • ¾ cup heavy cream
  • ¾ cup unsweetened soymilk (if you don't eat soy, can use milk, half and half, or even water)
  • 1 cup clam juice
  • 3 cups chopped cauliflower
  • 2 6½ oz cans of chopped clams or 1 10 oz can whole baby clams
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 2 tablespoons minced fresh parsley
