Ingredients
- 8 lg. Eggs
- ¼ c. Milk
- ½ tsp. Salt
- ¼ tsp. Pepper
- 2 Tbs. Unsalted Butter
- 1 ½ c. Chopped Ham Steaks
- 1 10 oz. Frozen Corn (Thawed)
- 1 Tbs. Chopped Fresh Thyme
- 4 Scallions (Sliced - ½ c.)
- 1 c. Shredded Cheddar Cheese
Steps
- 1. Position oven rack about 8" from broiler and preheat broiler to high. Ina lg. bowl, whisk eggs and milk until well combined then add in salt and pepper.
- skillet over high heat. Add ham; saute until just beginning to turn golden, 3 to 5 mins.
- 3. Add corn and thyme and saute until corn is warmed through about 2 mins. longer. Reduce heat to med to low, pour in egg mixture, top w/ scallions and cheese and cook stirring for 2 mins. Stop stirring and cook undisturbed until bottom is just firm about 5 mins.
- 4. Transfer skillet to oven and broil until top is set and edges are barely beginning to brown, 1 or 2 mins. watching carefully to prevent overcooking. Remove from oven cover and let stand for 5 mins. Serve warm or at room temperature.
