Corn, Ham and Scallion Frittata

Ingredients
  • 8 lg. Eggs
  • ¼ c. Milk
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 2 Tbs. Unsalted Butter
  • 1 ½ c. Chopped Ham Steaks
  • 1 10 oz. Frozen Corn (Thawed)
  • 1 Tbs. Chopped Fresh Thyme
  • 4 Scallions (Sliced - ½ c.)
  • 1 c. Shredded Cheddar Cheese
Steps
  1. 1.  Position oven rack about 8" from broiler and preheat broiler to high. Ina lg. bowl, whisk eggs and milk until well combined then add in salt and pepper.
  2. skillet over high heat. Add ham; saute until just beginning to turn golden, 3 to 5 mins.
  3. 3.  Add corn and thyme and saute until corn is warmed through about 2 mins. longer. Reduce heat to med to low, pour in egg mixture, top w/ scallions and cheese and cook stirring for 2 mins. Stop stirring and cook undisturbed until bottom is just firm about 5 mins.
  4. 4.  Transfer skillet to oven and broil until top is set and edges are barely beginning to brown, 1 or 2 mins. watching carefully to prevent overcooking. Remove from oven cover and let stand for 5 mins. Serve warm or at room temperature.
