Quinoa, Mango, Avcado & Halloumi Salad
Ingredients
  • 1 cup white quinoa
  • 2 lebanese cucumbers, diced
  • 1 large mango, diced
  • 1 large avocado, diced
  • ½ cup dill, roughly chopped
  • 200g halloumi cheese, cut into cubes or strips
  • subheading: Dressing:
  • 2 tablespoons extra virgin olive oil
  • 1 large lime, juiced
  • 1 tablespoon honey
  • 1 jalapeño, deseeded and finely chopped (optional)
  • Salt/Pepper
