Zucchini Salmon Patties with Mango Salsa (Whole30)
Ingredients

  • 2 cups zucchini shredded
  • 2 eggs
  • ¼ cup cilantro chopped
  • 2 tablespoons onion minced finely
  • 2 tablespoons jalapeno minced finely (or to taste)
  • 3 tablespoons lime juice
  • 2 teaspoon salt
  • ¾ cup almond flour
  • olive oil for frying (about ¼ cup)
