Stewed Chicken & Manioc (Yuca)
Ingredients
  • 2 to 3 lbs fresh manioc (or frozen, peeled yuca)*

  • 2 large onions, roughly chopped
  • 4 carrots, chopped
  • 2 sticks celery, chopped (optional)*
  • 6 cloves garlic, chopped
  • 1 tsp crushed red pepper
  • 2 tbsp smoked paprika*
  • 1 tsp black pepper, more as needed
  • 2 tbsp finely chopped fresh sage
  • 6 cups unsalted chicken stock, preferably homemade
  • 2 bay leaves
  • 4 to 5 lbs bone-in chicken thighs or leg quarters
  • Juice of 1 lemon
  • 2 tbsp finely chopped fresh parsley
