Instant Pot Banana Bundt Bread
Ingredients
  • 3 to 4 medium bananas (over ripe is best)
  • ¾ cup of sugar (I use ¼ cup sugar and 2 TBS of Stevia to cut down on the amount of sugar)
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 1 ¼ cups flour
  • 1 tsp baking soda
Steps
  1. In a mixing bowl beat eggs, applesauce and sugar(s) until well combined.
  2. Add mashed up bananas and vanilla and combine again.
  3. Add flour and baking soda and beat until smooth.
  4. Pour into a 6 cup bundt pan sprayed with Pam
  5. Put 1 cup of water into the bottom of the IP liner.
  6. Place a trivet or the steaming rack in next so your pan is not in the water or touching the bottom of the IP liner.
  7. Manual, high pressure for 25 minutes then 10 minutes NPR.
  8. I let the pan sit out of the IP for 5 minutes before I turned it over to plate.
