Almond Joy Cookies (Naturally Gluten Free!)
Ingredients
  • 1 cup unsalted almond slivers or slices
  • 1 cup sweetened shredded coconut
  • ½ cup plus 3 Tablespoons unsweetened cocoa powder
  • 3 cups powdered sugar
  • ½ teaspoon Kosher salt
  • 3 to 4 large egg whites, at room temperature
  • 1 Tablespoon vanilla extract
  • ¾ cup mini chocolate chips (I use semi-sweet)
  • Flaked sea salt, for sprinkling (optional)
