15 Minute Healthy Shrimp Scampi
Ingredients

  • 1 lb. large shrimp, peeled and deveined

  • ¼ tsp. crushed red pepper flakes
  • 4 cloves garlic, minced
  • ¼ cup low-sodium chicken broth
  • ½ lemon, zested
  • ¼ cup freshly squeezed lemon juice
  • 1 lb. zucchini noodles, spiralized (approx. 2 large zucchinis)
  • ¼ cup Italian parsley, chopped
  • 2 tbsp. freshly grated parmesan
