Caramel Oranges
Ingredients
  • 4 Navel oranges, peeled and pithed
  • 2 oranges, juiced
  • 1 c white sugar
  • Star anise, 2 stars
Steps
  1. Layer 4 oranges, sliced, into baking dish
  2. juice 2 oranges for use in caramel sauce
  3. Mix ΒΌ c into sugar, over medium high heat
  4. Once bubbling, once thick and shiney, wait for color change (like new penny)
  5. Turn heat down, continue to cook
  6. Add 2 TBS salted butter, whisk
  7. Add remaining half cup orange juice, whisk
  8. Pour straight on-top of oranges
  9. Chill in fridge for 3 to 6 hours, covered with wrap
  10. Serve orange slices with Greek yogurt on-top and chopped pistachios
