Chicken Madras Curry
Ingredients
  • 2 tbsp rapeseed (canola) oil
  • 2 dried Kashmiri chillies
  • 2 green cardamom pods
  • 1 ½ tbsp garlic and ginger paste
  • 2 green bird's eye chillies
  • 2 tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp turmeric
  • 1 tbsp kashmiri chilli powder
  • 1 tbsp mixed powder
  • 70ml (¼ cup) tomato puree
  • 300ml (1 ¼ cups) base sauce
  • 300g (11oz) pre-cooked chicken
  • 1 tbsp smooth mango chutney or lime pickle
  • Juice of ½ lime
  • ½ tsp garam masala
  • 1 tbsp fresh coriander (cilantro) to garnish
  • Salt to taste
