Banana bread No ka oi!
Large loaf or 24 muffins
Ingredients
  • bake 350 for 70 minutes-center will look slightly under baked
  • 325 if using glass or dark pan   425 for             20 minutes for muffins
  •  
  • 1.5 cups of very ripe bananas
  • .75 cups of sugar, maybe less depending on how ripe/sweet bananas are
  • .5 cup or less of coconut oil, or half oil half apple sauce
  • .5 cups yogurt
  • 2 eggs
  • 1 cup whole wheat flour, can mix oat flour, flax, etc to equal 1 cup
  • 1 cup oatmeal
  • .5 cups finely shredded un sweetened coconut
  • 1 tsp salt
  • 1or more tsp vanilla
  • 1 tsp cinnamon (optional)
  • 1tsp baking soda
  • 1 cup chopped nuts
