Broccoli Carrot Bean soup
Ingredients
  • 1 can kidney beans, rinsed
  • 1can Calinni beans, rinsed
  • 1 cup brown rice (20 min rice)
  • 7 cups veg or chicken stock (8 cups for stovetop)
  • 2 cups large sliced carrots
  • 1.5 cups fresh broccoli florets
  • 1 cup diced onion
  • 2 cups chopped celery (or ½t celery seeds)
  • ½ cup nutritional yeast (optional)
  • 2 teaspoons salt
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon parsley flakes
  • avacado for garnish
  • Salt and pepper
Steps
  1. Sauté onions in oil
  2. Add rice and stir for about 1 min, until rice is toasted
  3. Add broth, stir
  4. Add rest of ingredients, stir
  5. Cook in IP for 10 min, 5 min NPR,
  6. OR, on stovetop -  Bring to a boil, then lower heat cover and simmer for 20 min until rice is tender.
  7. Garnish with avocado slices. Salt and pepper to taste
