Skipped the rice as already had beans and corn and used a big dollop of jalapeño corn dip as the sauce. Mixed it all up with veggies, Yummers!
Ingredients

  • 1 cup roasted corn
  • creamy chipotle sauce
  • garnishes (lime, cherry tomatoes, avocado, fresh cilantro)
