  • 1 package Beyond Meat Beyond Beef
  • 1 medium yellow onion chopped
  • 1 red bell pepper chopped
  • 1 jalapeño pepper seeded and diced
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 1 Tbsp. oregano
  • 1 Tbsp. basil
  • 1 tsp. paprika
  • ½ tsp. cayenne pepper
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 ½ cups jasmine rice I used white, but brown would work, too
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 dash hot sauce if desired
  • 2 scallions chopped
