Bacon, Kale and Bean Soup
Ingredients

  • 2 small yellow or white onions (10 ounces total), finely chopped
  • 3 cloves garlic, minced or finely grated
  • 4 cups no-salt-added chicken broth, plus more as needed
  • ⅓ cup tomato puree
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • One (15 -ounce) can no-salt-added cannellini beans, rinsed and drained
  • 3 ½ ounces baby kale, roughly chopped (see NOTE)
  • Fine salt
  • Freshly ground black pepper
  • Extra-virgin olive oil, for serving
  • Warmed sourdough bread, for serving
