A spicy casserole, chock full of veggies, that's great to have on hand for breakfast on the go. Good for using up extra veggies about to expire. Dairy free and tasty with a definite after burn! Use a dollop of Ranch Dressing to cool things down.

Ingredients
  • 1 1b. sausage, removed from casings if needed (I used Italian Chicken sausage)
  • 2 T. Olive Oil, divided
  • 1 onion, quartered and sliced
  • 2 c. roughly chopped vegetables* cut to ½" pieces (such as broccoli, peppers, carrots, spinach etc..)
  • 12 eggs
  • ¼ c. Coconut Milk
  • ⅓ c. Frank's Original Hot Sauce
  • 1 t. Dill
  • 1 t. Sea Salt
  • 1 t. Pepper
  • ½ t. onion powder
  • ¼ t. garlic powder
  • Ranch Dressing**for topping - optional
Steps
  1. In a large pan, brown the sausage in 1 T. of the oil, breaking it up as you stir. When browned, drain off any liquid and then evenly spread on the bottom of a well greased 9 x 13 glass pan.
  2. In the same pan add the remaining 1 T. of oil along with the onion. Brown, stirring frequently until it begins to caramelize, about 8 to 10 minutes. Add the chopped vegetables and cook for another 5 minutes.
  3. While veggies are cooking, add the rest of the ingredients, eggs through garlic powder, to a large bowl and whisk well to combine, making sure the eggs are fully incorporated.
  4. When the veggies are finished cooking, spread them out evenly on top of the sausage. Pour the egg mixture over the top, making sure it covers all the sausage and veggies.
  5. Bake at 350 for 40 minutes or until the top is just beginning to brown and the center is firm.
  6. Cool and cut in half lengthwise and then crosswise to make 10 servings. Serve with a dollop of Ranch Dressing.
Notes
  • Can be individually wrapped in wax paper and placed in a zip lock freezer bag. Can be frozen for several months. Micro cook for 3 to 4 minutes to re-heat.
  • *You can try purchasing a chopped veggie mix to save some prep time.
