Rice-Topped Shepherd's Pie
Ingredients
  • 1 lb ground turkey
  • ¼ cup chopped onion
  • 1 to 2 cloves garlic
  • 1 8oz can tomato sauce
  • 1 can (2 cups) beef broth
  • 1 pkg frozen veggies
  • 1 to 2 tsp Italian seasoning
  •

  • 3 to 4 cups cooked rice
  • 1 egg, beaten
  • 1 cup grated cheddar cheese
  • ½ cup sour cream
Steps
  1. Cook ground meat, onion, & garlic until no longer pink.
  2. Salt and pepper to taste (add 2 tsp Worcestershire sauce and/or ½ tsp jerk seasoning if desired).
  3. Add broth, tomato sauce, and frozen veggies. Cook on medium heat for 3 to 5 min.
  4. Meanwhile, in a bowl, lightly beat the egg and add the cheese and sour cream. Mix with hot rice.
  5. Put the meat mixture in an 8x10 pan and top with rice mixture.
  6. Broil in oven about 7 minutes or until rice topping is quite hot. Enjoy!
