  • 3 sprigs fresh thyme, plus more for serving
  • 2 bay leaves
  • 2 medium carrots, cut into ½-inch pieces
  • 1 medium celery rib, cut into ¼-inch pieces
  • Freshly ground black pepper
  • Fresh croutons, for serving (optional; see instructions below)
