Turkish Red Lentil Soup
Ingredients
  • note: 2-½ Cup red lentils
  • note: 9 cups of Stock or Water
  • note: 1 large onion (quartered)
  • note: 2 small potatos (cut into large chunks)
  • note: 3 cloves garlic -
  • note: 2 Tbsp butter
  • note: 1 +¼ tsp salt (if not using stock you will need more salt just taste it)
  • note: 2Tbsp fresh lemon juice
  • note: 1tsp Cumin
  • note: red pepper flakes (optional )
Steps
  1. Step 1 - put everything except the lemon juice and cumin in a pot, boil it until the potatoes and onions look done, Step 2 - Process it with a hand blender until it's completely smooth, then stir in the cumin and lemon juice (process a little more with the hand processor) return to a boil, stir, remove from heat. Serve with Red Peppers or /and croutons sprinkled on the top.
  2. NOTE - “To Spice it up” melt 1 to 2 Tbsp. of butter in a small pan. Add 2tsp mint, 2tsp red pepper flakes, stir it up and then remove from heat. Drizzle the soup with this butter mixture for additional flavor.
