Taco Bell Pico De Gallo
Ingredients
  • subheading: When I make pico de gallo I like to use a sharp pairing knife on a wooden cutting board.  The pairing knife makes the tomato super easy to cut on, and the wooden cutting board keeps my knives sharp for a long time.   I also can't be without my hand held citrus juicer, it makes quick work of limes, and it really helps me to juice out all of the juice.:
  • subheading: For this recipe I like to use the tomatoes that are the freshest at the grocery store that I can get.   For the peppers here you can use jalapeños or serrano.  The serrano peppers are typically hotter than the jalapeño peppers.  So you chose your level of heat.   I am also using white onions for this recipe.  I like the flavor of the white onion better than the yellow for this recipe.   The white onion is a little sweeter than the yellow onion, and it will work better in this recipe.:
  • subheading: You will also use some fresh limes, and fresh cilantro for this recipe.   I suggest you pluck the leaves from the cilantro stems.  Sometimes the stems can be a little bitter.  Now we are all lined up and ready to go with our pico, so let's get to cooking.:
  • subheading: This can be purchased as a side, or it comes on their Fresco menu, which features recipes that are lower in fat.:
  • 1 large tomato, diced
  • 1 cup white onion diced fine
  • ½ jalapeno pepper, seeded, and chopped fine
  • ¼ cup chopped cilantro leaves
  • 2 tablespoons of lime juice
  • ¼ teaspoon salt
