Vegan Creamy Risotto with Roasted Spring Vegetables
Ingredients
  • 4 to 5 cups low-sodium vegetable broth
  • 2 tablespoons olive oil, divided
  • 1 medium onion, diced small
  • 3 cloves garlic, minced
  • 1 cup arborio rice
  • 1 bunch easter egg radishes {any radishes will do}
  • 1 bunch asparagus
  • 8 to 10 green onion stalks
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • sea salt, to taste
  • black pepper, to taste
