Ingredients
- subheading: Crust:
- 1 ½ cups (180g) King Arthur Unbleached All-Purpose Flour
- ½ teaspoon table salt
- ¼ cup (46g) vegetable shortening
- 5 tablespoons (71g) unsalted butter, cold
- 3 to 5 tablespoons (43g to 71g) ice water
- subheading: Filling:
- 2 large or 3 medium (254g) apples, peeled and diced in ¼" to ½" pieces (about 2 ¼ cups)
- ¼ cup (50g) granulated sugar, divided
- 2 tablespoons (28g) water
- 1 tablespoon (22g) boiled cider
- 2 teaspoons lemon juice
- ½ teaspoon King Arthur Apple Pie Spice*
- 2 teaspoons Instant ClearJel or 1 tablespoon (7g) cornstarch
- note: If you don’t have Apple Pie Spice, use ¼ teaspoon cinnamon, ⅛ teaspoon nutmeg, and ⅛ teaspoon allspice.

- 1 large egg, beaten with 1 tablespoon water (egg wash)
- 4 to 5 cups (792g to 990g) vegetable oil, or other neutral-flavored oil (such as peanut, canola, or safflower)
- ½ cup (100g) Cinnamon Sugar Plus or ½ cup (99g) granulated sugar mixed with 1 teaspoon Vietnamese cinnamon*
- note: If using a different kind of cinnamon, increase to 2 teaspoons.
