  • 3 cups sliced rhubarb, ¼ inch pieces

  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp cinnamon, nutmeg or cardamom (optional)
  • 2 eggs, separated
  • ⅓ cup butter, room temp
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • ¾ cup plus 2 Tbsp buttermilk or orange juice
  • 2 tsp grated lemon zest (optional)
