Weight Watchers Lemon Blueberry Muffins
Ingredients
  • 1 egg
  • ¼ cup egg whites I use from the carton
  • 2 Tbsp brown sugar
  • ⅓ cup unsweetened apple sauce
  • 2 Tbsp fresh squeezed lemon juice
  • ⅓ cup milk I used 1%
  • 1 tsp vanilla
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp lemon zest
  • 1 ⅓ cup flour
  • 1 cup frozen wild blueberries smaller ones you can use fresh I would just try not to use large ones
  • subheading: FOR THE SUGAR CRUMBLE:
  • 2 Tbsp sugar
  • 2.5 Tbsp flour
  • ¾ Tbsp melted reduced fat margarine
