A Nightshade-Free Marinara & Aip Tomato Substitute
Ingredients
  • 5 carrots, ends removed, peeled and cut into 1" pieces
  • 4 to 5 medium beets, ends removed, peeled and cut into 1" cubes
  • 1 medium butternut squash, ends removed, peeled and cut into 1" cubes
  • 1 C red wine (or ⅓ cup of each: beef stock, grape juice, apple cider vinegar)
  • subheading: Optional, for Marinara:
  • 2 Tbsp Italian seasoning (dried basil, parsley, oregano)
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp ground black pepper (omit for AIP)
