  • 1 large green bell pepper, diced small
  • 1 cup frozen organic corn, thawed
  • 1 cup diced tomatoes with juices

  • 3 Tbsps freshly squeezed lime juice
  • 2 Tbsps raw honey
  • ⅓ cup chopped fresh parsley or cilantro leaves
  • 1 clove of fresh garlic
  • sea salt and pepper to taste, about ¼ tsp each
