Green Curry Hummus with Lime, Cilantro, Coconut Milk, and Chopped Peanuts
Ingredients
  • 2 (15.5 ounce) cans chickpeas, drained, rinsed, and peeled*

  • juice of 1 lime
  • 2 cloves garlic, minced
  • ¼ cup coarsely chopped cilantro
  • 2 tablespoons Thai Kitchen Gluten Free Green Curry Paste, 4 oz (Pack of 6) green curry paste
  • 4 tablespoons canned coconut milk (full-fat works best), plus extra for drizzling
  • ⅓ cup tahini
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • pinch of red pepper flakes, plus extra for garnish
  • ½ cup olive oil, plus extra for drizzling
  • extra chickpeas for topping, if desired
  • 2 tablespoons chopped peanuts
  • chopped cilantro for garnish
  • lime slices for garnish
  • veggies for dipping
  • pita bread and pita chips for dipping
