Ingredients
  • Coconut oil, duck fat, ghee or clarified butter, as needed (see notes)
  • 1 lb fresh okra
  • Sea salt, to taste
  • Fresh cracked black pepper, to taste
  • 1 large shallot
  • ½ tsp smoked paprika
  • Pinch of crushed red pepper flakes
  • 10 oz cherry tomatoes (1 pint)
  • Squeeze of fresh lemon juice or splash of apple cider vinegar
  • 1 tsp honey or maple syrup (optional)

  • note: Notes: Because the okra needs to be cooked at extremely high temperatures to develop a proper char, you'll need to use a cooking fat that won't burn. If you're keeping things vegan, refined coconut oil is a great choice and will add a nice flavor. Otherwise, I highly suggest giving healthy fats like duck fat or ghee a try. You could substitute a neutral cooking oil like grape seed oil, but you may want to stir in a pat of butter or drizzle some extra virgin olive oil at the end to make up for the lack in flavor.
