Kombucha Scoby
Ingredients
  • 7C water
  • 1⁄2C white sugar
  • 4 bags plain black tea
  • 1C kombucha (minimally flavored)
Steps
  1. Heat 3C of water to boiling, dissolve the sugar in it.
  2. Remove from heat. Add tea bags. Cover and let steep at least 20 minutes.
  3. Transfer to a VERY CLEAN brewing crock. Add the remaining 4C. Cover and let cool to room temperature
  4. Add the kombucha. Cover top of crock with several clean towels
  5. Place somewhere dark and room temperature
  6. Wait 2 to 4 weeks until a 1⁄4 inch (at least) scoby has formed
Notes
  • Don’t use decaf tea, green/herbal tea, or flavored teas. The most basic black tea is best.
  • Only use white sugar, no other sweeteners.
