  • 2 large shallots, finely chopped
  • 1 tbsp. all-purpose flour
  • ¾ c. dry white wine
  • ½ c. chicken stock
  • 2 tbsp. crème fraîche or sour cream
  • 1 tsp. Dijon mustard
  • 1 tbsp. fresh thyme leaves
