  • 1 (12 ounce) bottle Guinness beer
  • 4 cups beef stock
  • 3 large carrots, peeled and diagonally sliced into bite-sized pieces
  • 1.5 lbs. Yukon gold potatoes, cut into bite-sized pieces
  • 3 tablespoons tomato paste
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • optional garnish: chopped fresh parsley
