Brocolli Salad

Ingredients
  • 4 nice size brocolli crowns or 2 (12 ounce) bags of raw broccoli
  • ½ cup of red onion, chopped
  • 1 cup of mild cheddar cheese, shredded
  • 8 to 10 slices of crispy cooked bacon, chopped
  • 1 cup of creamy coleslaw dressing (I use Kraft brand)

  • subheading: If you prefer a homemade dressing:
  • 1 cup mayonnaise
  • ½ cup sugar
  • 2 tbs vinegar (I have used apple cider, red wine and ricewine vinegars with good results)
Steps
  1. In large bowl combine all ingredients, add your dressing and mix well, chill in fridge for 2 hours. The best thing about this broccoli salad is you can add more dressing, more cheese, to your taste. Serves 8.
Notes
  • You want the broccoli in bite size pieces the bags often have larger pieces
  • I have added dried cranberries, sliced toasted almonds, pecans, etc. It's like a blank canvas to work with.
