Roasted Grape Tomato Panzanella Salad
Ingredients

  • 4 c French or Italian baguette cut into 1 inch cubes
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 1 to 2 tsp fresh garlic minced or grated

  • ¼ c grated Parmesan cheese, or a little more if you like

  • 4 c prepared Parmesan croutons
  • 8 oz grape tomatoes
  • Kosher salt and freshly ground pepper
  • 1-½ c cucumbers seeded, peeled and diced
  • ¼ medium red onion, thinly sliced
  • 10 or more Kalamata olives, halved
  • 4 oz Fontina cheese diced in ½ to 1 inch pieces
  • subheading: DRESSING:
  • 1 tsp Dijon mustard
  • 3 Tbsp red wine vinegar
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground pepper
  • ½ c extra virgin olive oil
