  • Cheesy chicken & Rice Casserole

  • 1 rotisserie chicken pulled from the bone. - 3 cups pulled chicken
  • 2 cups cooked rice
  •  
  • 3 cloves of garlic minced
  • ¼ cup butter softened
  • 1 cup red bell pepper chopped
  • 1 ½ cup chopped sweet onion
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 tbsp flour
  • 1 tbsp poultry seasoning
  •  
  • 1 cup frozen English peas
  • 1 cup grated Parmesan cheese for casserole body
  • 2 cups Chicken stock
  • ½ dry white wine
  • ¼ to ⅓ cup Heavy cream
  •  
  • ½ cup Parmesan cheese for topping
Steps
  1. Sauté pepper onion garlic in butter till tender.
  2. Add 1 tsp S& ¼ black Pepper
  3. Sprinkle in 1 tbsp all purpose flour and mix well
  4. Add chicken and mix to incorporate
  5. Add rice, poultry seasoning, peas, chicken stock, white wine, heavy cream, Mix to incorporate all.
  6. Increase heat from low to medium, add Parmesan cheese. Allow to cook & heat. Once casserole is hot through and through, then sprinkle the ½ cup Parmesan atop the casserole.
  7. Bake in the oven 400 to 425 oven for 25 to 35 mins till hot and bubbly and topping is browned.
