Ingredients
  • 1 can refried beans
  • 1 cup (4 oz) shredded cheddar cheese
  • 1 envelope taco seasoning mix
  • 2 medium tomatoes, chopped
  • 3 ripe avocados
  • 6 green onion tops, sliced
  • 1 Tbsp. lemon juice
  • Tortilla chips
  • ¼ cup sour cream (or more)
  • 1 can (2 ¼ oz) sliced ripe olives, drained
  • 1 can (4 oz) chopped green chilies, drained
Steps
  1. Combine beans and taco seasoning. Spread mixture on serving platter.
  2. Halve, de-seed, peel and mash avocados with lemon juice. Spread over beans.
  3. Spread sour cream over avocado.
  4. Sprinkle olives, chilies, tomatoes, onions and cheese over sour cream
  5. Serve with tortilla chips
Notes
  • The key to the avocados is to make sure they're well ripened so they're soft and mash easily.
  • You can either mash them by hand or put them in a blender or food processor to puree them.
  • Look for avocados that are dark green and give slightly when you press
