Blueberry Banana Protein Bread

Ingredients
  • 493 grams ripe bananas (about 4 large bananas)
  • 155 grams vanilla protein powder (I used Optimum Nutrition Gold Standard whey)
  • 5 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tbsp(s) Lemon juice
  • 1 cup unsweetened vanilla almond milk
  • 160 grams rolled oats (about 1 cup)
  • 368 gram blueberries (frozen are ok)
Steps
  1. Mash bananas in a large bowl. Add protein powder and mix well to combine.
  2. Add remaining ingredients and combine.
  3. Pour into loaf pan lined with parchment paper to prevent sticking.
  4. Bake at 350°F for 40 mintutes to an hour or until done.
Notes
  • You can also bake these in muffin cups for ~20 minutes instead.
