Priya & Ritu Krishna's Roasted Aloo Gobhi (Potatoes and Cauliflower)
Ingredients
  • 2 medium russet potatoes, cut into 2-inch-long sticks
  • 1 medium head cauliflower, cut into small florets
  • 3 tbsp +2 tbsp olive oil divided
  • 1 tsp cumin seeds
  • ½ tsp ground tumeric
  • 1 small yellow onion, finely diced
  • Pinch of asafetida (optional, but really great)
  • Pinch of red chili powder
  • 1 tbsp julienned fresh ginger
  • 1 tbsp fresh lime juice (from about half a lime), plus more if needed
  • 1 tsp kosher salt, plus more if needed
  • ½ cup chopped fresh cilantro (stems and leaves), for garnish
