Strawberry Souffle
Ingredients
  • 120g strawberries 35g sugar 1tsp lemon juice 1 tbsp corn starch 2 egg white (medium size) a pinch of salt 30g sugar powdered sugar for decoration
Steps
  1. Strawberry base
  2. Blend chopped strawberries with sugar and lemon juice
  3. Strain the puree using a sieve
  4. Put it on medium heat and stir in corn starch
  5. Remove from heat when it becomes thicken and let it cool down
  6. The meringue
  7. Whisk 2 room temperature egg white with a pinch of salt
  8. When it's foamy, start to add total 30g sugar in several times
  9. Whisk to soft peaks then fold to combine with the strawberry base
  10. Bake at 180C for 12 minutes
  11. Serve right away
